For christmas I like to gift treats I made myself and that are something everybody needs, so nothing gets wasted. And I think everybody needs a delicious, healthy snack from time to time.
I tried to optimize this recipe in terms of healthy ingredients. That’s why it contains pumpkin seeds, walnuts and dried apricots. Pumpkin seeds provide a lot of zinc and walnuts offer a good amount of omega-3. With all the nuts, oats and seeds the energy bites are a great source of protein. Dried apricots have huge amounts of vitamin A and if you cover the energy bites in sesame, you have a great source of calcium and magnesium as well.
So here is my recipe for some super delicious, vegan, gluten-free, refined sugar free energy bites:
- 180 g almonds
- 50 g oats
- 20 g walnuts
- 15 g pumpkin seeds
- 200 g dried apricots
- 3 tbsp cinnamon
- sesame or coconut flakes
Start by putting the nuts, oats and seeds in the food processor and blend for a minute or two, until a flour starts to form. Then add the dried apricot and the cinnamon.
Continue to blend until everything has been combined together to form a sticky mixture. This mixture can then be rolled into balls and covered in either sesame or coconut flakes. Then put them in the fridge to firm up for an hour.
You can create any combinations. Add vanilla, add orange peel, add more christmas spices.
Whatever you like. With the sweetness of dried fruits they always taste good in my experience. This combination I’m sharing here is focusing on simple ingredients and is optimized in terms of minerals and protein. So you can gift these sweets knowing that it will keep them healthy!
I have been collecting some nice glas jars, that I would have added to the garbage otherwise and put the energy bites there for the gifts.
